From the Acevedo sub-region of Huila in southern Colombia. Supremo is the top tier in the country's bean-size classification. Caturra and Castillo varieties prepared via washed process.

Huila lies in southern Colombia, along the southeastern arm of the Andes. The Acevedo sub-region sits at high altitude on volcanic soils with a balanced microclimate. Among the country's highest-scoring coffee geographies.
Caturra is a Bourbon mutation discovered in Brazil, high-yielding and balanced in body. Castillo is a local variety developed by Colombia's coffee research centre for leaf-rust resistance, carrying the region's durability character.
Washed process follows classic steps: cherry is mechanically pulped, ferments in a tank, gets rinsed, then sun-dries on raised beds.
At our atelier we roast to a Full City profile. This profile brings out Caturra's balanced body and Castillo's durable structure; it accommodates a wide range of filter methods.
Our recommendation
V60, paper filter or Aeropress are good starting points. All three methods give balanced results.
