Origin
Sidamo (Bensa), Ethiopia
Sidamo is a coffee region in southern Ethiopia's highlands. The Bensa sub-region holds the denser-bean lots within the area. Heirloom varieties prepared with the classic washed process.
OriginSidamo (Bensa), Ethiopia
The country and region where the coffee grew. Soil, climate and tradition carry into the cup; that is why it is the first line of the spec sheet. Ethiopia is considered the birthplace of coffee, home to forests where the coffee tree grows wild and to a hospitality tradition reaching back centuries.
ProcessNatural
Cherries are dried whole, fruit and all, in the sun. It is coffee's oldest processing method; the fruit leaves its mark on the cup.
RoastFull City
The degree to which the bean is transformed by heat. Full City sits between darkness and balance, a level that does not mask the bean's character. We follow the roast by eye and by smell; it rests on experience, not on numbers.

Our recommendation
V60 or paper filter is a good starting point. Aeropress is a balanced alternative.
