Origin

Copán, Honduras

Honey processing partly retains the cherry pulp, carrying a honey-like sweetness and viscous body to the cup. The Catuai variety completes the balance without losing clarity.

  • OriginCopán, Honduras

    The country and region where the coffee grew. Soil, climate and tradition carry into the cup; that is why it is the first line of the spec sheet. Honduras is among Central America's largest coffee producers; its mountain-grown coffees have become increasingly visible in recent years.

  • ProcessHoney

    A close relative of pulped natural, known by its Central American name: the skin comes off, the sticky fruit layer stays on the bean and dries there. The name comes from that layer's stickiness, not from any honey content.

  • RoastFull City

    The degree to which the bean is transformed by heat. Full City sits between darkness and balance, a level that does not mask the bean's character. We follow the roast by eye and by smell; it rests on experience, not on numbers.
