Sidamo is a coffee region in southern Ethiopia's highlands. The Bensa sub-region holds the denser-bean lots within the area. Heirloom varieties prepared with the classic washed process.

Sidamo is a coffee region named after Ethiopia's southern highlands. The Bensa sub-region holds the area's late-ripening, denser-bean lots. High altitude allows the bean to develop more slowly.
The bean's character is shaped by the Heirloom variety pool. Ethiopia's heirloom category covers indigenous varieties still growing in their native land, a genetic pool that has co-evolved with the region's history, not a single botanical name.
Washed process removes the cherry pulp mechanically after harvest, ferments the bean in a tank, then rinses and sun-dries it. This method brings the bean's structural character to the foreground.
We roast to a Full City profile at our atelier. This profile preserves Sidamo's high-altitude character and adds depth to the body; a lighter roast can read as too acidic for the Turkish palate, a darker one suppresses the region's character.
Our recommendation
V60 or paper filter is a good starting point. Aeropress is a balanced alternative.
