Origin
Antigua, Guatemala
Antigua is a high valley framed by three volcanoes: Agua, Fuego and Acatenango. Bourbon variety grown in mineral-rich volcanic soil, from Guatemala's longest-certified region.

Antigua is a historic coffee region at the foot of three active volcanoes. Volcanic ash and mineral-rich soil are the defining factor. One of the oldest geographies certified by Guatemala's national coffee association.
Bourbon is one of Latin America's classic heritage varieties. In Antigua's conditions it develops with denser mineral uptake; the region's volcanic character carries directly into the bean.
Washed process: after harvest the cherry is mechanically separated, rests in a fermentation tank, gets washed, then sun-dries on a patio. The classic method long established in Antigua.
At our atelier we roast to a Full City profile. This profile preserves Antigua's volcanic character and adds depth to the cup. Balanced results in filter and pour-over methods.
Our recommendation
V60 or paper filter is a good starting point. Chemex also brings out the cleanness of Antigua's character.
