Why specialty Turkish coffee
Turkish coffee, back on the table.
Turkish coffee is one of the oldest rituals in the coffee world. Yet for years, ordinary robusta or low-grade arabica has been pushed through it, relying on the cezve and tradition to do the heavy lifting. At Academy Coffee, we invert that assumption.
We treat it like a filter coffee: we source single-origin beans from selected estates. Brazilian body + Yemeni aromatic depth. We then stop each at a Medium-Dark profile optimised for Turkish coffee (distinct from the classic dark, one step short of espresso).
The result: the first minute in the cezve still feels familiar, but the balance is entirely different. The tasting discovery is yours; we don't promise, we invite.
Three disciplines
How a specialty Turkish coffee gets made.

Roast
Turkish coffee traditionally roasts one step darker than espresso. We stop just before that, at Medium-Dark. Reasoning: preserve sweetness, build body. Every batch is logged: date, profile, time, temperature.

Grind
Fine grind optimised for cezve, finer than espresso. You specify at order; we can also match an ibrik machine or espresso compatibility. Whole bean ships when you grind at home, for the longest shelf life.

Freshness
Beans are roasted within the last 30 days, with the roast date printed on the package. Orders ship within 5 business days. Instead of telling you how to hold a cezve or count the seconds, we invite you to a class; the discovery is yours.
