Chanchamayo (Junín), Peru
Typica variety grown in the Chanchamayo valley on the eastern slope of Peru's Andes. The region is one of the country's established coffee areas, with a rainforest climate and high altitude.

Chanchamayo sits in the Junín region on the eastern slope of the Andes. Rainforest climate, shade-grown cultivation and rich soils make it one of Peru's distinctive coffee geographies.
Typica is one of coffee's oldest botanical varieties; it spread to Latin America in the 18th century and is the ancestor of modern commercial cultivars. Yield is low, but the cup is clean and balanced.
Washed process: cherry pulp is mechanically removed, the bean ferments in a tank, gets rinsed, then dries on patios or raised beds. The standard method for the region.
At our atelier we roast to a Full City profile. A profile that preserves Typica's soft body and balanced acid structure; a consistent choice for morning brews.
Our recommendation
French Press or V60 is a good starting point. Typica's soft character works well in either method.
