Mundo Novo variety from the Rio Minas profile of Brazil's Minas Gerais region. Low acidity and full body; the traditional base for cezve brewing of Turkish coffee.

Process
Natural

Brazil is the carrier bean of Turkish coffee culture. The Rio Minas profile of the Minas Gerais region has long been a reference point in the history of Turkish coffee; low acidity and full body suit the intense heat discipline of cezve brewing.

Mundo Novo is a natural Bourbon × Typica cross discovered in Brazil. High-yielding and disease-resistant; today it accounts for a major share of Brazilian production. Balanced and sweet in character.

Natural process: whole cherries sun-dry. Inside the skin, limited oxygen concentrates the bean's sugars and brings out cocoa and caramel notes. Brazil's long-established classic method.

For Turkish coffee we apply a medium roast profile, lighter than Full City. This profile gives a balanced character when brewed in cezve; prepare with a copper cezve or modern ibrik machine.

Our recommendation

Cezve (copper preferred) is a good starting point. Brew over low heat, separate the foam.
